Masala Potatoes & Green Beans
Life is good when Potatoes are part of the meal.
▪️10 to 12 Small Potatoes, washed clean and boiled until cooked well
▪️1/2 IBS Green beans, trimmed, snapped in half, and boiled until tender
▪️2 tsp Ginger Garlic Paste
▪️3 to 4 tbsp Oil
▪️Few Curry leaves
▪️2 tsp Red Kashmiri Chili Powder
▪️1/2 tsp Turmeric
▪️2 tsp Cumin Coriander Powder
▪️Salt to taste
▪️1/2 tsp Cumin Seeds
▪️1/2 tsp Mustard Seeds
▪️1/4 tsp Green Chili Paste(Optional)
▪️A squeeze of Lemon Juice(Optional)
Heat oil in a Wok or a Pan on high heat. Add Cumin and Mustard seeds. Once they start to pop, reduce the heat between low to medium. Add curry leaves, ginger garlic paste, chili paste, and all other dry spices. Cook it while stirring continuously for a minute. Add boiled potatoes and green beans. Mix the veggies very well until the masala is coated evenly. Take the pan off of the stovetop. Squeeze some lemon juice on top. Toss it well. Serve it as a meal or a side dish.
