Cucumber and tomato kachumber salad is a versatile dish that can be served in many different ways. It can be used as a side dish with any Indian meal or served on its own as a light and refreshing snack.

Ingredients 

  • 1 large English cucumber diced
  • 1 large tomato diced
  • ½ red onion diced
  • 1 green chili pepper seeded and finely chopped
  • 2 tablespoons chopped fresh cilantro
  • Salt to taste
  • Juice of ½ lemon

Instructions 

  • In a large mixing bowl, combine the diced cucumber, tomato, and onion.
  • Add in the chopped green chili pepper and cilantro. Sprinkle salt over the vegetables.
  • Squeeze fresh lemon juice over the salad and toss everything together.
  • Cover the bowl and chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  • When ready to serve, give the salad a final toss.
  • Serve chilled as a side dish or a refreshing snack.
