How to Cook Dried Chickpeas (Instant Pot & Stovetop)

Learn how to cook dried chickpeas (garbanzo beans) until tender and creamy using the Instant Pot or stovetop. Soak the chickpeas for 8 hours or overnight, then cook until they're soft enough to mash easily. Use them for curries, hummus, salads, soups, bowls, and meal prep, or freeze them for later.

Ingredients 

  • 1 cup dried chickpeas , (garbanzo beans)
  • 3 cups water , for soaking
  • water , for cooking
  • ½ teaspoon salt , or to taste

Instructions 

Soak the chickpeas

  • Rinse the dried chickpeas a couple of times with water.
  • Place the chickpeas in a large bowl and cover with about 3 cups of water.
  • Soak at room temperature for 8 hours or overnight. (Best overnight because it is hard to wait 8 hours during the daytime lol)
  • Drain and rinse the chickpeas before cooking.

Instant Pot method

  • Add the soaked and drained chickpeas to the Instant Pot.
  • Add enough fresh water to cover the chickpeas by 2 inches. Add the salt.
  • Close the lid and set the valve to Sealing.
  • Cook on high Pressure for 18 minutes.
  • Let the pressure release naturally for 10–15 minutes, then carefully release any remaining pressure.
  • Check the chickpeas for tenderness. They should be soft and easily mashed between your fingers.
  • Transfer the chickpeas to a strainer to drain the water. If you are feeling green, reserve some of the cooking liquid for soups, curries, or other recipes to use it later.

Stovetop method

  • Add the soaked and drained chickpeas to a large pot.
  • Cover with about 2 inches of fresh water and add the salt.
  • Bring to a boil, then reduce the heat to a gentle simmer.
  • Partially cover and cook for 60 minutes, or until the chickpeas are tender.
  • Check the water occasionally and add more as needed to keep the chickpeas covered.
  • Drain when tender, reserving some of the cooking liquid if desired.

Notes

  • Save some cooking liquid for curries, soups, or stews.
  • Store cooked chickpeas in the refrigerator or freezer.
  • 1 cup dried chickpeas makes about 2½–3 cups cooked chickpeas.
  • This recipe uses soaked chickpeas. Unsoaked chickpeas require a longer cooking time.
