Ingredients
  

  • 1 large English cucumber diced
  • 1 large tomato diced
  • ½ red onion diced
  • 1 green chili pepper seeded and finely chopped
  • 2 tablespoons chopped fresh cilantro
  • Salt to taste
  • Juice of ½ lemon

Method
 

  1. In a large mixing bowl, combine the diced cucumber, tomato, and onion.
  2. Add in the chopped green chili pepper and cilantro. Sprinkle salt over the vegetables.
  3. Squeeze fresh lemon juice over the salad and toss everything together.
  4. Cover the bowl and chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. When ready to serve, give the salad a final toss.
  6. Serve chilled as a side dish or a refreshing snack.
