Ingredients 

  • 5 cups Spinach (8-10 oz bag) , roughly chopped
  • 200–250 g Paneer , cut into small cubes
  • 1 medium onion , chopped
  • 1 medium Tomato , chopped
  • 1 green chili , chopped
  • 4–5 garlic cloves , diced
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • ½ teaspoon turmeric powder
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon salt , or to taste
  • ½ teaspoon lemon juice , optional

Instructions 

  • Heat oil in a skillet over medium heat. Add the chopped onion and sauté until soft and lightly golden, about 5–7 minutes.
  • Add the cumin seeds, diced garlic, and chopped green chili. Sauté for 1–2 minutes, until fragrant.
  • Add chopped tomato, turmeric, ground cumin, ground coriander, and salt.
  • Cook until the tomatoes soften and the oil begins to separate from the masala.
  • Add the paneer cubes and gently toss to coat them with the masala. Cook for 2–3 minutes.
  • Add the roughly chopped spinach and stir everything together.
  • Cook uncovered until the spinach wilts and the excess moisture evaporates.
  • Taste and adjust the seasoning if needed.
  • Serve hot with roti, chapati, or your favorite Indian bread.

Notes

  • For softer paneer, soak refrigerated paneer cubes in warm water for a few minutes before cooking.
  • Add more green chili if you prefer a spicier sabzi.
  • Finish with a squeeze of fresh lemon juice if you like a little extra brightness.
